Apricot Crumble

You know, sometimes I wonder whether there are specific support groups for all of my weird quirky habits. I have a ton of them. I like to eat burgers for breakfast, I like to buy new books even if I have a whole bookshelf of unread books at home, I still think ‘call me maybe’ by Carly Rae Jepsen is a great song…..

My latest addiction is reality TV.  I’m not talking about MTV’s 16 and pregnant, which at least sends a message to teenage girls to stop having unprotected sex with their deadbeat boyfriends… I’m talking about the Idon’t-even-want-to-admit-that-I-like-this-shit-kinda shows. Keeping up with the Kardashians, Ice and Coco, The Real Housewives of wherever, you name it and I’ve seen it all. You, dear reader, probably don’t want to admit it either, but I know you know exactly what I’m talking about.

So what has bad reality TV and Apricot Crumble in common? Nothing really, but after an entire morning watching the new season of The Real World I really wanted to do something productive that required at least some brain activity.

I spend the next hour making this apricot crumble and spend the rest of the afternoon…. well you can probably guess.

Ingredients:

– about 15 apricots
– A cup of cookie crumbles*
– 3/4 cup flour
– 1/4 + 1/2 cup sugar
– 1/2 cup butter
– 1 tspn cinnamon
– a pinch of salt

* the cookies crumbles are optional. I used pieces of ‘stroopwafel‘. These traditional Dutch cookies contain a layer of molasses/treacle. While the crumble bakes the cookie crumbles crisp up and the sweet molasses/treacle melts trough the tart.

How to:
Preheat oven to  350° Fahrenheit or 180° Celsius.

1. Generously butter the tart pan.
2. Quarter the apricots.
3. Distribute the quartered apricots over the buttered tart pan. Add the 1/4 cup sugar and the teaspoon of cinnamon. Mix to ensure all the apricots are covered with the sugar and the cinnamon.
4. Sprinkle cookie crumbles on top.
5. Make the crumble mixture by mixing the butter, the sugar and the flour together. Sprinkle the crumble mixture on top of the apricots and cookie crumbles.
6. Bake in a preheated oven for about 40 minutes.
